She is Dean of the Faculty of Health Sciences and academic director of undergraduate degrees in Food Science & Technology and Gastronomy at Universidad Europea del Atlántico, while also teaching and conducting research in health and nutrition, AI within international university networks.

Graduated in Bologna, PhD in Biochemistry and postdoc in Nutrition in Granada, is a Full Professor of Food Science & Nutrition in the Faculty of Medicine at Polytechnic University of Marche, a Guest Professor at Jiangsu University, a Distinguished and Honorary Professor at the University of Vigo, and Director of the Nutrition and Health Research Center at the European Atlantic University (Santander). He holds an Honorary Doctorate from the Faculty of Medicine at Carol Davila University (Bucharest). PhD degree on “Food, Health and Drug”, specialized in Food Science. She is Assistant Professor in Clinical Nutrition at the Polytechnic University of Marche (Italy). She is the supervisor of more than 150 student thesis of the International Masters in Nutrition and Dietetics. She is the author of about 240 papers in international scientific journals. From 2019 to 2024, she has been named Thomson Reuters Highly Cited Researcher. She has extensive experience in field of chemistry, in the assessment of the nutritional and phytochemical composition of different foodstuffs, and in the field of biochemistry and nutrition, in the evaluation of the role of bioactive compounds from different dietary matrices on human health (especially berries and honey), and in particular on the biological mechanisms related to oxidative stress and inflammation, in different in vitro and in vivo experimental models.

I have been a Researcher at UNIVPM since May 2020. I hold a Master's in Agricultural Sciences (2010) and a PhD in Food, Nutrition, and Health (2015) from Università Politecnica delle Marche (UNIVPM). My research at UNIVPM's D3A focuses on tree crop management and the enhancement of fruit quality. In particular, I have studied genetic, environmental, and agronomic effects on berries and stone fruits. I have been involved in the activities of many European and Italian research projects.

He is a full-time Research Lecturer at the Universidad Europea del Atlántico, where he leads and manages competitive R&D&I projects. His work focuses on educational technologies, data modeling and applied artificial intelligence, including the design and implementation of digital learning applications and virtual assistants. He has coordinated or directed multiple funded projects, authored high-impact indexed publications, and holds a recognized Research Six-Year Term (CNEAI–ANECA).

Marino Leopoldo Manuel Sungo is a doctoral candidate in Social Sciences, specializing in Social Anthropology, at the Faculty of Social Sciences of Agostinho Neto University. He is a specialist in Higher Education Management.

He currently serves as Deputy Director for Scientific Affairs and Graduate Studies at the Polytechnic Institute of José Eduardo dos Santos University, where he also teaches and coordinates the local management of academic and scientific projects, such as CLINICALSIM, MAHINE, and UNI.AO, all funded by the European Union. He is also Deputy Coordinator of advanced training programs, namely the Master’s in Obstetric and Neonatal Nursing and the Specialization in New Technologies Applied to Health. He is noted for his leadership skills, academic management, and involvement in innovation initiatives in teaching and research.
